Instructions
- In a microwave-safe mug, whisk together the egg, almond flour, cocoa powder, erythritol, baking powder, almond milk, melted butter, vanilla extract, and salt until smooth and well combined.
- Microwave the mug on high for 60-90 seconds, checking for doneness. The cake should rise and look set but still moist in the center.
- Allow the mug cake to cool for a minute before enjoying. You can top it with a dollop of whipped cream or sugar-free chocolate syrup if desired.
