Description

A rich and airy chocolate soufflé that is low in carbs and perfect for a keto diet.


Ingredients

Scale
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup heavy cream
  • 4 large eggs, separated
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar


Instructions

  1. Preheat the oven to 375°F (190°C) and grease ramekins.
  2. In a bowl, whip the egg whites and cream of tartar until stiff peaks form.
  3. In another bowl, mix the egg yolks, sweetener, cocoa powder, vanilla, and heavy cream until well combined.
  4. Gently fold the egg whites into the chocolate mixture.
  5. Pour the batter into the prepared ramekins.
  6. Bake for 12-15 minutes until set but still soft in the center.
  7. Serve immediately while still warm.

Notes

  • These soufflés are best served fresh out of the oven.
