A rich and airy chocolate soufflé that is low in carbs and perfect for a keto diet.

- 2 tablespoons unsweetened cocoa powder
- 1 cup heavy cream
- 4 large eggs, separated
- 1/2 cup erythritol or other keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1/2 teaspoon cream of tartar
Instructions
- Preheat the oven to 375°F (190°C) and grease ramekins.
- In a bowl, whip the egg whites and cream of tartar until stiff peaks form.
- In another bowl, mix the egg yolks, sweetener, cocoa powder, vanilla, and heavy cream until well combined.
- Gently fold the egg whites into the chocolate mixture.
- Pour the batter into the prepared ramekins.
- Bake for 12-15 minutes until set but still soft in the center.
- Serve immediately while still warm.
Notes
- These soufflés are best served fresh out of the oven.
- Adjust sweetness according to your taste.
