- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/4 cup erythritol sweetener
- 5 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted butter
- 1 tablespoon vanilla extract
- 1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix almond flour, coconut flour, salt, baking powder, and erythritol.
- In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract.
- Combine wet and dry ingredients, mixing until smooth.
- In a small bowl, mix cinnamon and erythritol.
- Pour half the batter into the loaf pan, then sprinkle with cinnamon mix.
- Pour remaining batter and swirl with a knife.
- Bake for 50-60 minutes or until golden and a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container in the fridge for up to a week.
- This bread can also be frozen for longer storage.
