A spooky and delicious treat perfect for Halloween, these Keto Coconut Ghost Fat Bombs are low in carbs and high in flavor.
Ingredients

- 1 cup unsweetened shredded coconut
- 1/2 cup coconut oil, melted
- 1/4 cup cream cheese, softened
- 1/4 cup powdered erythritol (or your preferred keto sweetener)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon activated charcoal (optional, for color)
- 1/2 teaspoon ghost-shaped silicone mold (or any mold of your choice)
Instructions
- In a mixing bowl, combine the melted coconut oil, softened cream cheese, powdered erythritol, vanilla extract, and salt. Mix until smooth and well combined.
- Add the unsweetened shredded coconut to the mixture and stir until fully incorporated. If using activated charcoal for color, add it now and mix until evenly distributed.
- Spoon the mixture into the ghost-shaped silicone mold, filling each cavity to the top. Press down gently to ensure they hold their shape.
- Place the filled mold in the freezer for about 1-2 hours, or until the fat bombs are completely solid.
- Once solid, carefully pop the fat bombs out of the mold and store them in an airtight container in the refrigerator or freezer.
Notes
- For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the mixture before combining the coconut.
- Experiment with different molds for various shapes, such as pumpkins or bats, to make them festive for Halloween.
