Description

A deliciously easy keto coconut mug cake that’s perfect for a quick, low-carb dessert!


Ingredients

  • 2 tablespoons coconut flour
  • 2 tablespoons sweetener (erythritol or similar)
  • 1/8 teaspoon baking powder
  • 1 large egg
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon unsweetened cocoa powder (optional)
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon water (if needed)


Instructions

  1. In a microwave-safe mug, combine coconut flour, sweetener, and baking powder.
  2. Add the egg and melted coconut oil and mix until smooth.
  3. If using, add cocoa powder and shredded coconut and mix well.
  4. If the mixture is too thick, add a splash of water.
  5. Microwave on high for 1 minute and 30 seconds, or until the cake is set and cooked through.
  6. Allow to cool slightly before enjoying.
