Ingredients

- 2 tablespoons coconut flour
- 2 tablespoons sweetener (erythritol or similar)
- 1/8 teaspoon baking powder
- 1 large egg
- 2 tablespoons coconut oil, melted
- 1 tablespoon unsweetened cocoa powder (optional)
- 2 tablespoons unsweetened shredded coconut
- 1 tablespoon water (if needed)
Instructions
- In a microwave-safe mug, combine coconut flour, sweetener, and baking powder.
- Add the egg and melted coconut oil and mix until smooth.
- If using, add cocoa powder and shredded coconut and mix well.
- If the mixture is too thick, add a splash of water.
- Microwave on high for 1 minute and 30 seconds, or until the cake is set and cooked through.
- Allow to cool slightly before enjoying.
Notes
- This mug cake is best enjoyed warm straight from the microwave.
- You can top it with whipped cream or additional coconut if desired.
