- 1 cup almond flour
- 1 cup unsweetened shredded coconut
- 1/4 cup erythritol or your choice of keto-friendly sweetener
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup melted coconut oil
- 1/4 cup unsweetened almond milk
- 1 teaspoon rosewater
- 1/2 cup chopped walnuts or pistachios
- 1/4 cup melted butter (for brushing)
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a large bowl, mix together the almond flour, shredded coconut, erythritol, cinnamon, and salt until well combined.
- In another bowl, blend the melted coconut oil, almond milk, and rosewater until smooth.
- Gradually incorporate the wet mixture into the dry ingredients, stirring until a cohesive dough forms.
- On a clean surface, roll out the dough into a rectangle approximately 1/4 inch thick.
- Evenly distribute the chopped walnuts or pistachios over the surface of the dough.
- Gently roll the dough from one long edge to the other, creating a tight log.
- Cut the log into 1-inch segments and arrange them on the prepared baking sheet.
- Brush the tops with melted butter and, if desired, sprinkle sesame seeds over them.
- Bake in the preheated oven for 20-25 minutes, or until they turn a lovely golden brown.
- Let them cool for a few minutes before enjoying.
Notes
- Enhance the flavor by adding a splash of vanilla extract to the dough.
- Feel free to swap out the walnuts or pistachios for pecans or almonds for a delightful variation.
