Ingredients

  • 1 cup almond flour
  • 1 cup unsweetened shredded coconut
  • 1/4 cup erythritol or your choice of keto-friendly sweetener
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon rosewater
  • 1/2 cup chopped walnuts or pistachios
  • 1/4 cup melted butter (for brushing)
  • 1 tablespoon sesame seeds (optional, for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, mix together the almond flour, shredded coconut, erythritol, cinnamon, and salt until well combined.
  3. In another bowl, blend the melted coconut oil, almond milk, and rosewater until smooth.
  4. Gradually incorporate the wet mixture into the dry ingredients, stirring until a cohesive dough forms.
  5. On a clean surface, roll out the dough into a rectangle approximately 1/4 inch thick.
  6. Evenly distribute the chopped walnuts or pistachios over the surface of the dough.
  7. Gently roll the dough from one long edge to the other, creating a tight log.
  8. Cut the log into 1-inch segments and arrange them on the prepared baking sheet.
  9. Brush the tops with melted butter and, if desired, sprinkle sesame seeds over them.
  10. Bake in the preheated oven for 20-25 minutes, or until they turn a lovely golden brown.
  11. Let them cool for a few minutes before enjoying.
