Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup green onions, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons coconut oil (for frying)
  • For the lime dip:
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. In a food processor, pulse the shrimp until coarsely chopped.
  2. In a large bowl, combine the chopped shrimp, shredded coconut, almond flour, green onions, eggs, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix until well combined.
  3. Form the mixture into small patties, about 2 inches in diameter. You should get around 10-12 cakes.
  4. Heat coconut oil in a large skillet over medium heat. Once hot, add the shrimp cakes in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
  5. While the cakes are cooking, prepare the lime dip by whisking together mayonnaise, lime juice, lime zest, garlic powder, salt, and pepper in a small bowl.
  6. Once the shrimp cakes are cooked, transfer them to a plate lined with paper towels to drain excess oil.
  7. Serve the coconut-shrimp cakes warm with the lime dip on the side.

Notes

  • For added flavor, consider mixing in some chopped cilantro or parsley into the shrimp mixture.
  • If you prefer baking, place the formed cakes on a parchment-lined baking sheet and bake at 375°F for 15-20 minutes, flipping halfway through.
