- 1 pound raw shrimp, peeled and deveined
- 1 cup unsweetened shredded coconut
- 1/2 cup almond flour
- 1/4 cup green onions, finely chopped
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons coconut oil (for frying)
- For the lime dip:
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a food processor, pulse the shrimp until coarsely chopped.
- In a large bowl, combine the chopped shrimp, shredded coconut, almond flour, green onions, eggs, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix until well combined.
- Form the mixture into small patties, about 2 inches in diameter. You should get around 10-12 cakes.
- Heat coconut oil in a large skillet over medium heat. Once hot, add the shrimp cakes in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
- While the cakes are cooking, prepare the lime dip by whisking together mayonnaise, lime juice, lime zest, garlic powder, salt, and pepper in a small bowl.
- Once the shrimp cakes are cooked, transfer them to a plate lined with paper towels to drain excess oil.
- Serve the coconut-shrimp cakes warm with the lime dip on the side.
Notes
- For added flavor, consider mixing in some chopped cilantro or parsley into the shrimp mixture.
- If you prefer baking, place the formed cakes on a parchment-lined baking sheet and bake at 375°F for 15-20 minutes, flipping halfway through.
