A delicious and low-carb twist on the traditional tres leches cake, perfect for those following a keto diet.

- 2 cups almond flour
- 1 cup unsweetened shredded coconut
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup erythritol or your favorite keto-friendly sweetener
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened coconut milk
- 1/2 cup heavy cream
- 1/2 cup unsweetened almond milk
- 1/4 cup powdered erythritol (for garnish)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or non-stick spray.
- In a mixing bowl, combine almond flour, shredded coconut, baking powder, and salt.
- In a separate bowl, cream the softened butter with erythritol until light and airy.
- Add the eggs one at a time, mixing well after each addition, then incorporate the vanilla extract.
- Gradually fold the dry ingredients into the wet mixture, alternating with the coconut milk, until just combined.
- Transfer the batter to the prepared baking dish and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan.
- Once cooled, poke holes across the surface of the cake with a fork.
- In a separate bowl, whisk together the heavy cream and almond milk, then drizzle this mixture over the cake, allowing it to absorb.
- Chill the cake in the refrigerator for at least 2 hours, or ideally overnight.
- Before serving, dust the top with powdered erythritol and a sprinkle of cinnamon if desired. Cut into squares and enjoy!
Notes
- For a chocolate variation, mix in 1/4 cup unsweetened cocoa powder with the dry ingredients.
- For added crunch, fold in 1/2 cup of chopped nuts or sugar-free chocolate chips into the batter before baking.
