Description

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup erythritol or your favorite keto-friendly sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened coconut milk
  • 1/2 cup heavy cream
  • 1/2 cup unsweetened almond milk
  • 1/4 cup powdered erythritol (for garnish)
  • 1/2 teaspoon cinnamon (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a mixing bowl, combine almond flour, shredded coconut, baking powder, and salt.
  3. In a separate bowl, cream the softened butter with erythritol until light and airy.
  4. Add the eggs one at a time, mixing well after each addition, then incorporate the vanilla extract.
  5. Gradually fold the dry ingredients into the wet mixture, alternating with the coconut milk, until just combined.
  6. Transfer the batter to the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool completely in the pan.
  9. Once cooled, poke holes across the surface of the cake with a fork.
  10. In a separate bowl, whisk together the heavy cream and almond milk, then drizzle this mixture over the cake, allowing it to absorb.
  11. Chill the cake in the refrigerator for at least 2 hours, or ideally overnight.
  12. Before serving, dust the top with powdered erythritol and a sprinkle of cinnamon if desired. Cut into squares and enjoy!

Notes

  • For a chocolate variation, mix in 1/4 cup unsweetened cocoa powder with the dry ingredients.
