- 4 oz cream cheese, softened
- 1/4 cup granulated erythritol or your preferred keto sweetener
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine softened cream cheese and erythritol until smooth. Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together almond flour, baking powder, and salt. Gradually add the dry ingredients to the cream cheese mixture, stirring until a dough forms.
- Scoop portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon.
- Bake for 12-15 minutes, or until the edges are golden brown. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
