Ingredients

- 2 cups almond flour
- 1/2 cup cocoa powder
- 1/2 cup erythritol
- 1/4 teaspoon salt
- 6 large eggs
- 2 cups unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 8 ounces sugar-free dark chocolate
Instructions
- In a bowl, mix almond flour, cocoa powder, erythritol, and salt.
- In another bowl, whisk together eggs, almond milk, and vanilla extract.
- Combine wet ingredients with dry ingredients until smooth.
- Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to spread evenly.
- Cook for about 2 minutes on each side or until set and lightly browned.
- Repeat until all batter is used, stacking crepes on a plate.
- For the ganache, heat heavy cream and pour over chopped dark chocolate, stirring until smooth.
- Layer crepes with ganache in between each layer.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Make sure to let the ganache cool slightly before spreading.
- You can add berries for extra flavor and decoration.
