Description

This Keto Crepe Cake with Chocolate Ganache is a delicious low-carb dessert that layers thin crepes with rich chocolate ganache.


Ingredients

  • 2 cups almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup erythritol
  • 1/4 teaspoon salt
  • 6 large eggs
  • 2 cups unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces sugar-free dark chocolate


Instructions

  1. In a bowl, mix almond flour, cocoa powder, erythritol, and salt.
  2. In another bowl, whisk together eggs, almond milk, and vanilla extract.
  3. Combine wet ingredients with dry ingredients until smooth.
  4. Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to spread evenly.
  5. Cook for about 2 minutes on each side or until set and lightly browned.
  6. Repeat until all batter is used, stacking crepes on a plate.
  7. For the ganache, heat heavy cream and pour over chopped dark chocolate, stirring until smooth.
  8. Layer crepes with ganache in between each layer.
  9. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • Make sure to let the ganache cool slightly before spreading.
  • You can add berries for extra flavor and decoration.
