- 2 large eggs
- 1 cup almond flour
- 1/4 cup cream cheese
- 1/2 cup unsweetened almond milk
- 1/2 tsp vanilla extract
Instructions
- In a bowl, whisk together the eggs, almond flour, cream cheese, almond milk, and vanilla until smooth.
- Heat a non-stick skillet over medium heat and add a bit of butter.
- Pour a small amount of the batter into the skillet and swirl to coat the bottom.
- Cook for about 1-2 minutes or until the edges start to lift, then flip and cook for another minute.
- Repeat with the remaining batter.
- Fill each crepe with your favorite fillings and roll up.
