Ingredients

  • 8 ounces mushrooms, thinly sliced
  • 1 teaspoon minced garlic
  • 2 teaspoons olive oil
  • 10 ounces frozen spinach, thawed and drained
  • 2 tablespoons grated parmesan cheese
  • 4 large eggs
  • 16 ounces cottage cheese (4% fat)
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Squeeze out as much water as possible from the thawed spinach and set aside.
  3. In a large skillet, heat olive oil over medium heat and add minced garlic. Cook for about 1 minute until fragrant.
  4. Add the sliced mushrooms to the skillet and cook until tender, about 5-7 minutes.
  5. Stir in the drained spinach along with salt, pepper, and nutmeg. Cook until heated through, then drain the mixture in a colander to remove excess moisture.
  6. Grease a 9-inch pie plate and sprinkle grated parmesan cheese around the bottom and sides to coat.
  7. In a mixing bowl, whisk together the eggs, heavy cream, and cottage cheese until well combined.
  8. Fold in the spinach and mushroom mixture into the egg mixture.
  9. Pour the combined mixture into the prepared pie dish and sprinkle shredded mozzarella cheese on top.
  10. Place the pie dish on a baking sheet and bake for 50-60 minutes, or until the center is set and the edges are golden brown.
  11. Turn off the oven and let the pie sit in the oven for an additional 10 minutes.
  12. Allow the pie to cool for 10 more minutes before slicing and serving.
