- 1 teaspoon grated ginger

- 1 medium zucchini, spiralized into zoodles
- 1 red bell pepper, sliced
- 1 cup bean sprouts

Instructions
- In a large pot, heat the coconut oil over medium heat. Add the red curry paste and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and coconut milk, stirring to combine. Bring the mixture to a gentle simmer.
- Add the fish sauce, lime juice, grated ginger, and minced garlic to the pot. Stir well and let it simmer for another 5 minutes.
- Add the shrimp and sliced red bell pepper to the pot. Cook for about 3-5 minutes, or until the shrimp are pink and cooked through.
- In the last minute of cooking, add the spiralized zucchini and bean sprouts to the pot. Stir gently to combine and heat through.
- Serve the soup hot, garnished with fresh cilantro and lime wedges on the side.
