  • 1 tablespoon lime juice
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 medium zucchini, spiralized into zoodles
  • 1 red bell pepper, sliced
  • 1 cup bean sprouts
  • Fresh cilantro, for garnish
  • Lime wedges, for serving


Instructions

  1. In a large pot, heat the coconut oil over medium heat. Add the red curry paste and sauté for about 1 minute until fragrant.
  2. Pour in the chicken broth and coconut milk, stirring to combine. Bring the mixture to a gentle simmer.
  3. Add the fish sauce, lime juice, grated ginger, and minced garlic to the pot. Stir well and let it simmer for another 5 minutes.
  4. Add the shrimp and sliced red bell pepper to the pot. Cook for about 3-5 minutes, or until the shrimp are pink and cooked through.
  5. In the last minute of cooking, add the spiralized zucchini and bean sprouts to the pot. Stir gently to combine and heat through.
  6. Serve the soup hot, garnished with fresh cilantro and lime wedges on the side.
