Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon black pepper
  • 1 cup cooked chicken, shredded
  • 1/4 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 1/4 cup coconut milk
  • 1 tablespoon fresh cilantro, chopped (optional)
  • 1 tablespoon lime juice


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, melted coconut oil, egg, and salt. Mix until a dough forms. If the dough is too crumbly, add a teaspoon of water until it holds together.
  3. In a separate skillet, heat a small amount of oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened, about 3-4 minutes.
  4. Add the shredded chicken, coconut milk, garlic powder, onion powder, turmeric, cumin, curry powder, black pepper, and lime juice to the skillet. Stir well and cook for another 5 minutes until heated through. Remove from heat and stir in cilantro if using.
  5. Divide the dough into 8 equal portions. Roll each portion into a ball and flatten it into a circle about 1/4 inch thick.
  6. Place a spoonful of the chicken filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. You can crimp the edges with a fork for a decorative touch.
  7. Place the filled curry puffs on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
  8. Allow to cool slightly before serving. Enjoy warm!
