A delicious low-carb cake that mimics the classic Ding Dong flavor.

- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/2 cup erythritol
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/2 cup melted coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, cocoa powder, erythritol, and baking powder.
- In another bowl, whisk together eggs, almond milk, melted coconut oil, and vanilla extract.
- Combine wet and dry ingredients and mix until smooth.
- Pour the batter into a greased cake pan and bake for 25-30 minutes.
- Let cool before serving.
Notes
- This cake can be topped with sugar-free chocolate ganache.
- Store leftovers in the refrigerator for up to a week.
