This Keto Earthquake Cake is a decadent dessert that delivers a rich chocolate flavor with a surprise cream cheese filling.


Ingredients

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 large eggs
  • 1/2 cup erythritol
  • 1/2 cup unsweetened almond milk
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • 8 oz cream cheese
  • 1/2 cup sugar-free chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, erythritol, almond milk, melted butter, and vanilla extract.
  4. Combine dry and wet ingredients until smooth.
  5. Pour half the batter into a greased baking dish.
  6. In a separate bowl, beat cream cheese until smooth and add chocolate chips.
  7. Layer the cream cheese mixture over the batter, then top with remaining batter.
  8. Bake for 25-30 minutes.
  9. Let it cool before serving.
