			- 1 1/2 cups almond flour
- 1/2 cup erythritol
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 16 ounces cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup eggnog
- 1 teaspoon vanilla extract
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, erythritol, and melted butter until crumbly. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth. Add eggs, heavy cream, eggnog, vanilla extract, nutmeg, cinnamon, lemon juice, and baking powder, mixing until well combined.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes until the center is set. Remove from oven and let cool before refrigerating.
- Chill in the refrigerator for at least 4 hours before serving.
