Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup erythritol
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 16 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, erythritol, and melted butter until crumbly. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese until smooth. Add eggs, heavy cream, eggnog, vanilla extract, nutmeg, cinnamon, lemon juice, and baking powder, mixing until well combined.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 50-60 minutes until the center is set. Remove from oven and let cool before refrigerating.
  6. Chill in the refrigerator for at least 4 hours before serving.
