- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the almond flour, coconut flour, salt, and baking powder.
- Incorporate the softened butter, egg, and apple cider vinegar into the dry ingredients, stirring until a cohesive dough forms. If too dry, add a teaspoon of water gradually.
- In a skillet over medium heat, sauté the chopped onion and minced garlic until fragrant and translucent.
- Add the ground beef (or chicken) and cook until browned, draining any excess fat.
- Season the mixture with cumin, smoked paprika, chili powder, salt, and pepper. Remove from heat and fold in the shredded cheese and cilantro if desired.
- Divide the dough into two equal portions and roll out one portion between two sheets of parchment paper to about 1/4 inch thickness.
- Cut into circles using a large cookie cutter or a bowl, and place the circles on a baking sheet lined with parchment paper.
- Spoon a generous amount of the meat filling onto one half of each dough circle.
- Fold the other half over the filling to create a pocket, pressing the edges firmly to seal.
- Use a fork to crimp the edges for an extra secure seal and decorative touch.
- Make a few small slits on the top of each hand pie to allow steam to escape during baking.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden and crisp.
- Allow to cool slightly before serving.
