  • 1 tablespoon apple cider vinegar
  • 1 pound ground beef (or chicken)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, coconut flour, salt, and baking powder.
  3. Incorporate the softened butter, egg, and apple cider vinegar into the dry ingredients, stirring until a cohesive dough forms. If too dry, add a teaspoon of water gradually.
  4. In a skillet over medium heat, sauté the chopped onion and minced garlic until fragrant and translucent.
  5. Add the ground beef (or chicken) and cook until browned, draining any excess fat.
  6. Season the mixture with cumin, smoked paprika, chili powder, salt, and pepper. Remove from heat and fold in the shredded cheese and cilantro if desired.
  7. Divide the dough into two equal portions and roll out one portion between two sheets of parchment paper to about 1/4 inch thickness.
  8. Cut into circles using a large cookie cutter or a bowl, and place the circles on a baking sheet lined with parchment paper.
  9. Spoon a generous amount of the meat filling onto one half of each dough circle.
  10. Fold the other half over the filling to create a pocket, pressing the edges firmly to seal.
  11. Use a fork to crimp the edges for an extra secure seal and decorative touch.
  12. Make a few small slits on the top of each hand pie to allow steam to escape during baking.
  13. Bake in the preheated oven for 25-30 minutes, or until the crust is golden and crisp.
  14. Allow to cool slightly before serving.
