- 1 cup unsalted butter, at room temperature
- 1/2 cup erythritol or other keto-friendly sweetener
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/4 teaspoon sea salt
- 1 large egg yolk
- 1 tablespoon flaky sea salt, for topping
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream the butter and erythritol together until light and fluffy.
- Add the vanilla extract and egg yolk, mixing well.
- Gradually stir in the almond flour and sea salt until a dough forms.
- Roll the dough into balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball slightly with your hand and sprinkle with flaky sea salt.
- Bake for 12-15 minutes or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, try adding a teaspoon of almond extract.
