Deliciously buttery and simply irresistible, these Keto French Salted Butter Cookies are the perfect low-carb treat for any occasion.


Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/4 teaspoon sea salt
  • 1 large egg yolk
  • 1 tablespoon flaky sea salt, for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream the butter and erythritol together until light and fluffy.
  3. Add the vanilla extract and egg yolk, mixing well.
  4. Gradually stir in the almond flour and sea salt until a dough forms.
  5. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
  6. Flatten each ball slightly with your hand and sprinkle with flaky sea salt.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
