Ingredients

- 3 large zucchini, sliced thin
- 1 pound ground beef
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 egg
- 2 cups marinara sauce (low-sugar)
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, brown the ground beef over medium heat until fully cooked.
- In a mixing bowl, combine ricotta cheese, egg, Italian seasoning, garlic powder, and onion powder.
- In a baking dish, layer zucchini slices, followed by the meat mixture, ricotta mixture, and marinara sauce. Repeat the layers until all ingredients are used.
- Top with mozzarella and parmesan cheese.
- Bake for 30-35 minutes until cheese is melted and bubbly.
- Allow to cool for a few minutes before slicing and serving.
Notes
- For best results, salt the zucchini slices and let them sit for 10 minutes to draw out moisture.
- Serve with a fresh salad for a complete meal.
