A delicious low-carb Keto Goat Cheese Thyme Tart that is perfect for those following a ketogenic diet.

- 1 ½ cups almond flour
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ cup unsalted butter, melted
- 1 large egg
- 4 ounces goat cheese, softened
- 1 cup heavy cream
- 2 large eggs
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat the oven to 350°F. Grease a 9-inch tart pan with olive oil.
- In a mixing bowl, combine almond flour, salt, and garlic powder. Stir in the melted butter and 1 egg until a dough forms. Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the bottom with a fork to prevent bubbling.
- Bake the crust for 12-15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
- In another bowl, whisk together the softened goat cheese, heavy cream, 2 eggs, thyme, salt, and pepper until smooth.
- Pour the goat cheese mixture into the cooled tart crust.
- Bake for an additional 25-30 minutes, or until the filling is set and slightly golden on top.
- Let the tart cool for at least 10 minutes before slicing and serving.
Notes
- For a richer flavor, consider adding sautéed spinach or caramelized onions to the filling.
- You can also substitute the goat cheese with feta or cream cheese for a different taste profile.
