Ingredients

  • 1 ½ cups almond flour
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 4 ounces goat cheese, softened
  • 1 cup heavy cream
  • 2 large eggs
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for greasing)


Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch tart pan with olive oil.
  2. In a mixing bowl, combine almond flour, salt, and garlic powder. Stir in the melted butter and 1 egg until a dough forms. Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the bottom with a fork to prevent bubbling.
  3. Bake the crust for 12-15 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  4. In another bowl, whisk together the softened goat cheese, heavy cream, 2 eggs, thyme, salt, and pepper until smooth.
  5. Pour the goat cheese mixture into the cooled tart crust.
  6. Bake for an additional 25-30 minutes, or until the filling is set and slightly golden on top.
  7. Let the tart cool for at least 10 minutes before slicing and serving.
