Description

A delicious low-carb twist on the traditional Greek spinach pie, packed with flavor and healthy ingredients.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 pound fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 3 large eggs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup almond flour
  • 1/4 cup melted butter


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add garlic and spinach, cooking until spinach wilts.
  4. In a bowl, combine spinach mixture, feta, mozzarella, eggs, oregano, salt, and pepper.
  5. In another bowl, mix almond flour and melted butter to form a crust.
  6. Press the crust mixture into the bottom of a greased baking dish.
  7. Pour the spinach mixture over the crust and spread evenly.
  8. Bake for 30-35 minutes or until set and golden on top.
  9. Let cool slightly before slicing and serving.

Notes

  • For a firmer texture, add more almond flour to the crust.
  • Serve warm or at room temperature.
  • This recipe can be frozen; just reheat before serving.
