- 2 pounds boneless, skinless chicken thighs
- 1 cup green chili salsa
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded Monterey Jack cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large oven-proof skillet, heat olive oil over medium heat.
- Season the chicken thighs with cumin, garlic powder, onion powder, salt, and black pepper.
- Add the chicken to the skillet and brown on both sides.
- Pour the green chili salsa over the chicken.
- Sprinkle shredded cheese on top.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
