  • 1 cup guava puree (unsweetened, fresh or canned)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon gelatin powder (optional, for added firmness)


Instructions

  1. Preheat your oven to 325°F and prepare a 9-inch springform pan with a light coating of butter or non-stick spray.
  2. In a bowl, mix together the almond flour, ¼ cup of erythritol, and sea salt. Add the melted butter and stir until the mixture resembles coarse crumbs. Firmly press this mixture into the base of the springform pan to create a crust layer.
  3. In a separate large bowl, whip the softened cream cheese with the remaining ½ cup of erythritol and the vanilla extract until the mixture is smooth and fluffy.
  4. Incorporate the eggs one at a time, ensuring each is fully blended before adding the next. Fold in the guava puree and lemon juice until well combined.
  5. If using gelatin, dissolve it in a couple of tablespoons of warm water and mix it into the batter.
  6. Carefully pour the creamy filling over the prepared crust in the springform pan.
  7. Bake for 45 to 50 minutes, or until the edges are firm and the center has a slight wobble.
  8. Once baked, turn off the oven and allow the cheesecake to cool inside for an additional 30 minutes to prevent cracking.
  9. After cooling, let the cheesecake reach room temperature before transferring it to the refrigerator. Chill for a minimum of 4 hours, or ideally overnight, to achieve the best texture.
