Instructions
- Begin by heating a medium-sized saucepan over low heat. Add the unsweetened shredded coconut, almond flour, coconut cream, erythritol, vanilla extract, ground cardamom, and a pinch of salt. Mix everything thoroughly until well combined.
- Allow the mixture to cook on low heat for approximately 5-7 minutes, stirring continuously. You’ll know it’s ready when it thickens and begins to separate from the sides of the pan.
- Once thickened, take the saucepan off the heat and let the mixture cool for about 10-15 minutes, allowing it to become manageable.
- After cooling, lightly grease your hands with coconut oil or water to avoid sticking. Scoop out small amounts of the mixture and shape them into bite-sized balls, roughly 1 inch in diameter.
- If you like, roll the formed balls in extra shredded coconut for an added layer of texture. Arrange the coconut bites on a serving plate or a sheet of parchment paper.
- To enhance their firmness, place the bites in the refrigerator for at least 30 minutes before enjoying.
