Instructions

  1. Begin by heating a medium-sized saucepan over low heat. Add the unsweetened shredded coconut, almond flour, coconut cream, erythritol, vanilla extract, ground cardamom, and a pinch of salt. Mix everything thoroughly until well combined.
  2. Allow the mixture to cook on low heat for approximately 5-7 minutes, stirring continuously. You’ll know it’s ready when it thickens and begins to separate from the sides of the pan.
  3. Once thickened, take the saucepan off the heat and let the mixture cool for about 10-15 minutes, allowing it to become manageable.
  4. After cooling, lightly grease your hands with coconut oil or water to avoid sticking. Scoop out small amounts of the mixture and shape them into bite-sized balls, roughly 1 inch in diameter.
  5. If you like, roll the formed balls in extra shredded coconut for an added layer of texture. Arrange the coconut bites on a serving plate or a sheet of parchment paper.
  6. To enhance their firmness, place the bites in the refrigerator for at least 30 minutes before enjoying.
