- 2 cups cooked, shredded chicken
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced jalapeƱos (fresh or pickled)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup crushed pork rinds (for topping)
- 2 tablespoons chopped fresh cilantro (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked shredded chicken, cream cheese, cheddar cheese, sour cream, diced jalapeƱos, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle the crushed pork rinds evenly over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let it cool for 5 minutes before serving. Garnish with chopped cilantro if desired.
Notes
- For a spicier kick, add more jalapeƱos or a dash of hot sauce to the mixture.
- You can also substitute the chicken with cooked ground beef or turkey for a different flavor profile.
