- 1 large Chicken Breast
- 3/4 cup Cottage Cheese
- 2 Celery Stalks diced
- 2 Green Onions sliced
- 1/2 cup Shredded Cheddar Cheese
- 3 tbsp Chopped Fresh Jalapeno
- 5 slices Bacon cooked and crumbled
- 1/2 cup Sour Cream
- 1/4 cup Chopped Fresh Jalapeno
- 1/4 cup Fresh Cilantro
- 1/2 tsp Onion Powder
- 1/2 tsp Garlic Salt
- Juice of 2 Limes
Instructions
- Cook chicken breast based on your preference (baked, boiled, grilled). Once cooked through, shred and chop into small pieces. Set aside to cool.
- Chop celery, green onions, and jalapenos.
- In a large bowl, combine the shredded chicken, celery, onions, jalapenos, bacon, cottage cheese, and shredded cheddar cheese. Stir well.
- In a food processor or blender, combine all of the dressing ingredients. Blend until smooth.
- Pour the jalapeno dressing over the salad and toss.
- Serve over salad greens, on keto bread, or enjoy as is!
