Description

A delicious and low-carb twist on traditional gratin, featuring cauliflower and kimchi.


Ingredients

Scale
  • 2 cups cauliflower florets (fresh or frozen)
  • 1 cup kimchi, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt to taste
  • Chopped green onions for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh cauliflower, steam the florets for about 5 minutes until slightly tender. If using frozen, microwave according to package instructions until thawed. Drain any excess water.
  3. In a large mixing bowl, combine the steamed cauliflower and chopped kimchi. Stir in the garlic powder, onion powder, black pepper, and salt to taste.
  4. In a separate bowl, mix the heavy cream, mozzarella cheese, and half of the Parmesan cheese until well combined.
  5. Pour the cheese mixture over the cauliflower and kimchi, stirring gently to coat everything evenly.
  6. Transfer the mixture to a greased baking dish. Sprinkle the remaining Parmesan cheese on top, and dot with butter.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions if desired before serving.

  • For added protein, mix in cooked shredded chicken or ground beef before baking.
