A delicious and low-carb twist on traditional gratin, featuring cauliflower and kimchi.

- 2 cups cauliflower florets (fresh or frozen)
- 1 cup kimchi, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Salt to taste
- Chopped green onions for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- If using fresh cauliflower, steam the florets for about 5 minutes until slightly tender. If using frozen, microwave according to package instructions until thawed. Drain any excess water.
- In a large mixing bowl, combine the steamed cauliflower and chopped kimchi. Stir in the garlic powder, onion powder, black pepper, and salt to taste.
- In a separate bowl, mix the heavy cream, mozzarella cheese, and half of the Parmesan cheese until well combined.
- Pour the cheese mixture over the cauliflower and kimchi, stirring gently to coat everything evenly.
- Transfer the mixture to a greased baking dish. Sprinkle the remaining Parmesan cheese on top, and dot with butter.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions if desired before serving.
Notes
- For added protein, mix in cooked shredded chicken or ground beef before baking.
- Experiment with different cheeses like cheddar or gouda for a unique flavor twist.
