Description
A delicious and easy-to-make Keto Korean Black Sesame and Almond Jelly Cake that is perfect for dessert lovers on a low-carb diet.
Ingredients
Scale
- 1 cup black sesame paste
- 1 cup unsweetened almond milk
- 1/2 cup erythritol or your favorite keto-friendly sweetener
- 1/4 cup gelatin powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sliced almonds for garnish
- 1 tablespoon toasted black sesame seeds for decoration
Instructions
- Begin by warming the black sesame paste and almond milk in a saucepan over medium heat, stirring gently until the mixture is well combined and the sweetener has dissolved completely. Avoid boiling the mixture to maintain its smooth texture.
- In a small bowl, combine the gelatin powder with 1/4 cup of cold water, allowing it to sit for about 5 minutes to hydrate.
- Once the black sesame mixture is warm, take it off the heat and incorporate the bloomed gelatin, stirring until it is fully dissolved. Add the vanilla extract and mix thoroughly to enhance the flavor.
- Carefully transfer the mixture into a greased 9-inch round cake pan or a silicone mold, ensuring an even distribution.
- Place the pan in the refrigerator and let it chill for a minimum of 4 hours, or until the cake has completely set.
- After the jelly cake has firmed up, gently extract it from the pan.
- Before serving, adorn the top with sliced almonds and a sprinkle of toasted black sesame seeds for an appealing finish.
Notes
- For a unique twist, add a few drops of almond extract along with the vanilla for an extra layer of flavor.
- If you want to experiment, substitute the black sesame paste with tahini for a different nutty taste, adjusting the sweetness to your preference.
