- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or preferred sweetener)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup unsweetened coconut milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon pandan extract (optional, for color and flavor)
- 1 cup shredded unsweetened coconut
- 1 tablespoon coconut oil (for greasing)
Instructions
- In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.
- In another bowl, whisk together the eggs, coconut milk, vanilla extract, and pandan extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until fully combined. Let the batter rest for about 10 minutes.
- While the batter rests, prepare the filling by mixing shredded coconut with a bit of erythritol to taste.
- Heat a non-stick skillet over medium heat and lightly grease with coconut oil. Pour about 1/4 cup of batter into the skillet, swirling to create a thin pancake. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
- Carefully flip the pancake and cook for another 1-2 minutes. Remove from the skillet and repeat with the remaining batter.
- Once all pancakes are cooked, place a spoonful of the coconut filling in the center of each pancake and fold it over. Serve warm.
Notes
- For added flavor, consider mixing a pinch of cinnamon or nutmeg into the batter.
- You can substitute the shredded coconut filling with a mixture of cream cheese and a low-carb sweetener for a different taste.
