Keto Kuih Ketayap is a delicious low-carb dessert that combines the flavors of coconut and almond flour, perfect for those following a keto diet.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or preferred sweetener)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup unsweetened coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pandan extract (optional, for color and flavor)
  • 1 cup shredded unsweetened coconut
  • 1 tablespoon coconut oil (for greasing)


Instructions

  1. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.
  2. In another bowl, whisk together the eggs, coconut milk, vanilla extract, and pandan extract until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until fully combined. Let the batter rest for about 10 minutes.
  4. While the batter rests, prepare the filling by mixing shredded coconut with a bit of erythritol to taste.
  5. Heat a non-stick skillet over medium heat and lightly grease with coconut oil. Pour about 1/4 cup of batter into the skillet, swirling to create a thin pancake. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
  6. Carefully flip the pancake and cook for another 1-2 minutes. Remove from the skillet and repeat with the remaining batter.
  7. Once all pancakes are cooked, place a spoonful of the coconut filling in the center of each pancake and fold it over. Serve warm.

Notes

  • For added flavor, consider mixing a pinch of cinnamon or nutmeg into the batter.
  • You can substitute the shredded coconut filling with a mixture of cream cheese and a low-carb sweetener for a different taste.
