Ingredients

  • 2 cups chopped walnuts
  • 1 cup chopped almonds
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup erythritol or preferred keto sweetener
  • 1/2 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 1/4 cup sugar-free maple syrup
  • 1/4 teaspoon salt
  • 1 package of thawed phyllo dough (8 oz)
  • 1/4 cup chopped pistachios (optional for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish with cooking spray or melted butter.
  2. In a large bowl, mix together the chopped walnuts, almonds, ground cinnamon, shredded coconut, erythritol, and salt until well combined.
  3. Place a single sheet of phyllo dough into the prepared dish and brush it gently with melted butter. Repeat this layering process with 5 sheets of phyllo, ensuring each is brushed with butter.
  4. Evenly distribute half of the nut mixture over the phyllo layers.
  5. Add 3 more sheets of phyllo on top, brushing each with melted butter.
  6. Spread the remaining nut mixture over this layer.
  7. Finish by layering another 5 sheets of phyllo, brushing each with butter as before.
  8. Cut the assembled baklava into squares or diamond shapes using a sharp knife.
  9. In a small saucepan, combine water, sugar-free maple syrup, and vanilla extract, bringing it to a gentle simmer while stirring until the sweetener is fully dissolved.
  10. Remove from heat and pour the syrup evenly over the baklava.
  11. Bake for 30-35 minutes in the preheated oven, or until the top is golden brown and crispy.
  12. Allow to cool for at least 15 minutes before serving, and sprinkle with chopped pistachios if desired.

Notes

  • For an added depth of flavor, consider mixing in a pinch of nutmeg with the nut filling.
