- 1/2 cup erythritol or preferred keto sweetener
- 1/2 cup melted unsalted butter
- 1 teaspoon vanilla extract
- 1/4 cup water
- 1/4 cup sugar-free maple syrup
- 1/4 teaspoon salt
- 1 package of thawed phyllo dough (8 oz)
- 1/4 cup chopped pistachios (optional for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish with cooking spray or melted butter.
- In a large bowl, mix together the chopped walnuts, almonds, ground cinnamon, shredded coconut, erythritol, and salt until well combined.
- Place a single sheet of phyllo dough into the prepared dish and brush it gently with melted butter. Repeat this layering process with 5 sheets of phyllo, ensuring each is brushed with butter.
- Evenly distribute half of the nut mixture over the phyllo layers.
- Add 3 more sheets of phyllo on top, brushing each with melted butter.
- Spread the remaining nut mixture over this layer.
- Finish by layering another 5 sheets of phyllo, brushing each with butter as before.
- Cut the assembled baklava into squares or diamond shapes using a sharp knife.
- In a small saucepan, combine water, sugar-free maple syrup, and vanilla extract, bringing it to a gentle simmer while stirring until the sweetener is fully dissolved.
- Remove from heat and pour the syrup evenly over the baklava.
- Bake for 30-35 minutes in the preheated oven, or until the top is golden brown and crispy.
- Allow to cool for at least 15 minutes before serving, and sprinkle with chopped pistachios if desired.
Notes
- For an added depth of flavor, consider mixing in a pinch of nutmeg with the nut filling.
- You can also swap out walnuts for pecans or hazelnuts for a unique twist.
