Deliciously tangy and sweet, these Keto Lemon Bar Cookies are the perfect low-carb dessert for lemon lovers.


Ingredients

  • 1 cup almond flour
  • 1/4 cup powdered erythritol
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, mix almond flour, powdered erythritol, and baking powder.
  3. Add melted coconut oil, egg, lemon juice, and lemon zest to the dry ingredients and mix until combined.
  4. Pour the batter into the prepared baking pan and spread evenly.
  5. Bake for 20-25 minutes or until the edges are golden.
