Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, erythritol, and melted butter to form the crust.
- Press the mixture into a pie dish and bake for 10-12 minutes.
- In another bowl, whisk together eggs, lemon juice, lemon zest, salt, and vanilla extract.
- Pour the lemon filling into the pre-baked crust.
- Bake for an additional 20-25 minutes until set.
- Allow to cool before serving.
