Ingredients

- 2 cups heavy cream
- 1 cup unsweetened almond milk
- 1/4 cup erythritol or your preferred keto sweetener
- 2 large eggs
- 2 large egg yolks
- 2 stalks fresh lemongrass, chopped (or 1 teaspoon lemongrass paste)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium saucepan, combine the heavy cream, almond milk, erythritol, and chopped lemongrass. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally. Remove from heat and let it steep for about 15 minutes to infuse the lemongrass flavor.
- In a mixing bowl, whisk together the eggs, egg yolks, vanilla extract, and salt until well combined.
- Strain the warm cream mixture through a fine mesh sieve into the bowl with the egg mixture, discarding the lemongrass pieces. Whisk until smooth and fully combined.
- Preheat your oven to 325°F. Prepare a baking dish by placing four ramekins inside it. Pour the custard mixture evenly into the ramekins.
- Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins to create a water bath.
- Bake in the preheated oven for 25-30 minutes, or until the custards are set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, refrigerate for at least 2 hours before serving.
- Serve chilled, garnished with a sprig of fresh mint or a sprinkle of unsweetened cocoa powder if desired.
Notes
- For a citrus twist, add the zest of one lime or lemon to the cream mixture before heating.
- If you prefer a different flavor, substitute the lemongrass with lavender or vanilla bean for a unique custard experience.
