- 1 1/2 cups macadamia nuts
- 1/2 cup unsweetened shredded coconut
- 1/4 cup butter, melted
- 2 tablespoons erythritol
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine macadamia nuts, shredded coconut, melted butter, and erythritol. Press mixture into the bottom of a pie pan to form the crust.
- In another bowl, whisk together the eggs, vanilla extract, and salt. Stir in the heavy cream until combined.
- Pour the egg mixture over the crust in the pie pan.
- Bake for 25-30 minutes until set. Let cool before serving.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- Can be served with whipped cream for added flavor.
