Description

A delicious low-carb pie made with rich macadamia nuts, perfect for keto diets.


Ingredients

  • 1 1/2 cups macadamia nuts
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup butter, melted
  • 2 tablespoons erythritol
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup heavy cream


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine macadamia nuts, shredded coconut, melted butter, and erythritol. Press mixture into the bottom of a pie pan to form the crust.
  3. In another bowl, whisk together the eggs, vanilla extract, and salt. Stir in the heavy cream until combined.
  4. Pour the egg mixture over the crust in the pie pan.
  5. Bake for 25-30 minutes until set. Let cool before serving.

Notes
