Ingredients

  • 2 cups almond flour
  • 1 cup unsweetened shredded coconut
  • 1/2 cup erythritol or your favorite keto-friendly sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened almond milk
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup sugar-free dark chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish with parchment paper.
  2. In a sizable bowl, mix together the almond flour, shredded coconut, erythritol, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, combine the melted coconut oil, almond milk, and vanilla extract, whisking until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a cohesive dough forms.
  5. If desired, gently incorporate the chopped nuts and chocolate chips.
  6. Spread the dough evenly in the prepared baking dish, pressing it down firmly.
  7. Bake for 20-25 minutes, or until the edges turn a lovely golden brown.
  8. Once baked, allow it to cool in the dish for about 10 minutes, then carefully lift it out using the parchment paper and transfer it to a wire rack to cool completely.
  9. After cooling, slice into bars and enjoy!
