- 2 cups almond flour
- 1 cup unsweetened shredded coconut
- 1/2 cup erythritol or your favorite keto-friendly sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup melted coconut oil
- 1/4 cup unsweetened almond milk
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup sugar-free dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish with parchment paper.
- In a sizable bowl, mix together the almond flour, shredded coconut, erythritol, baking powder, salt, and cinnamon until well combined.
- In another bowl, combine the melted coconut oil, almond milk, and vanilla extract, whisking until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring until a cohesive dough forms.
- If desired, gently incorporate the chopped nuts and chocolate chips.
- Spread the dough evenly in the prepared baking dish, pressing it down firmly.
- Bake for 20-25 minutes, or until the edges turn a lovely golden brown.
- Once baked, allow it to cool in the dish for about 10 minutes, then carefully lift it out using the parchment paper and transfer it to a wire rack to cool completely.
- After cooling, slice into bars and enjoy!

- For an extra indulgent touch, consider drizzling melted sugar-free chocolate over the bars before slicing.
- If you’re looking for a nut-free alternative, sunflower seed flour can be used in place of almond flour.
