  • 1 ½ cups almond flour
  • ½ cup unsweetened cocoa powder
  • ¼ cup erythritol sweetener
  • ½ teaspoon sea salt
  • ½ cup melted unsalted butter
  • 2 packages (8 ounces each) cream cheese, softened
  • ½ cup erythritol sweetener
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • 1 cup heavy cream


Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan with butter or cooking spray.
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, and sea salt. Add melted butter and mix until the texture resembles damp sand.
  3. Press the mixture firmly into the base of the springform pan to create an even crust. Bake for 10 minutes and allow to cool.
  4. In a separate large bowl, whip the softened cream cheese and erythritol until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in vanilla, cinnamon, ginger, cardamom, cloves, black pepper, and nutmeg until well combined.
  6. Pour the cream cheese filling over the cooled crust and smooth the surface with a spatula.
  7. Bake for 45 to 50 minutes, until the edges are set and the center is slightly wobbly. Turn off the oven and let the cheesecake cool inside for an hour.
  8. After an hour, remove the cheesecake and let it cool completely at room temperature.
  9. Refrigerate for at least 4 hours, or overnight, to firm up.
  10. When ready to serve, whip the heavy cream until soft peaks form and spread or pipe it over the top of the cheesecake.
