Ingredients
Scale
- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- ¼ cup erythritol sweetener
- ½ teaspoon sea salt
- ½ cup melted unsalted butter
- 2 packages (8 ounces each) cream cheese, softened
- ½ cup erythritol sweetener
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cardamom
- ¼ teaspoon ground cloves
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg
- 1 cup heavy cream
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan with butter or cooking spray.
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, and sea salt. Add melted butter and mix until the texture resembles damp sand.
- Press the mixture firmly into the base of the springform pan to create an even crust. Bake for 10 minutes and allow to cool.
- In a separate large bowl, whip the softened cream cheese and erythritol until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in vanilla, cinnamon, ginger, cardamom, cloves, black pepper, and nutmeg until well combined.
- Pour the cream cheese filling over the cooled crust and smooth the surface with a spatula.
- Bake for 45 to 50 minutes, until the edges are set and the center is slightly wobbly. Turn off the oven and let the cheesecake cool inside for an hour.
- After an hour, remove the cheesecake and let it cool completely at room temperature.
- Refrigerate for at least 4 hours, or overnight, to firm up.
- When ready to serve, whip the heavy cream until soft peaks form and spread or pipe it over the top of the cheesecake.
