- 2 cups mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered erythritol (or your favorite keto-friendly sweetener)
- 1 teaspoon orange blossom essence
- 1 teaspoon pure vanilla extract
- 4 large egg yolks
- 1/4 teaspoon sea salt
Instructions
- Begin by gently warming the heavy whipping cream in a saucepan over medium heat. Add the powdered erythritol, orange blossom essence, vanilla extract, and sea salt, stirring until the sweetener has completely dissolved and the mixture is warm to the touch.
- In a separate bowl, vigorously whisk the egg yolks until they become light in color and slightly thickened.
- To temper the egg yolks, gradually introduce about half a cup of the warm cream mixture into the yolks while continuously whisking to prevent them from cooking.
- Once combined, slowly pour the tempered yolk mixture back into the saucepan with the remaining cream, stirring constantly to ensure an even blend.
- Continue to cook the mixture over low heat, stirring often, until it thickens enough to coat the back of a spoon, which should take around 5-7 minutes. Avoid boiling at all costs.
- Take the saucepan off the heat and fold in the mascarpone cheese until the custard is silky and smooth.
- Transfer the custard into individual ramekins or a large serving bowl. Cover with plastic wrap, ensuring it touches the surface to prevent a skin from forming.
- Chill in the refrigerator for a minimum of 2 hours, or until the custard has set. Serve it cold for a refreshing treat.

- For a delightful chocolate variation, mix in 2 tablespoons of unsweetened cocoa powder to the cream before heating.
