- 1 ripe avocado, peeled and pitted
- 1/4 cup unsweetened cocoa powder
- 1/4 cup unsweetened almond milk
- 1/4 cup erythritol or your preferred keto sweetener
- 2 teaspoons matcha green tea powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a blender or food processor, combine the avocado, cocoa powder, almond milk, erythritol, matcha powder, vanilla extract, and salt.
- Blend on high until the mixture is smooth and creamy, scraping down the sides as needed.
- Taste the mousse and adjust sweetness if necessary by adding more erythritol. Blend again to combine.
- Once fully blended, transfer the mousse into serving bowls or glasses.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld and the mousse to firm up.
- Serve chilled, garnished with a sprinkle of matcha powder or a few berries if desired.
Notes
- For a creamier texture, add 1-2 tablespoons of coconut cream to the blender.
- Experiment with flavors by adding a few drops of peppermint or almond extract for a unique twist.
