Delightful Keto Matcha-Mango Sorbet Popsicles that are perfect for a refreshing treat.


Ingredients

Scale
  • 1 ½ cups diced ripe mango (fresh or frozen)
  • 1 cup full-fat coconut milk
  • 2 tablespoons matcha green tea powder
  • 2 tablespoons erythritol or your favorite keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice


Instructions

  1. Place the diced mango in your blender.
  2. Add the coconut milk, matcha powder, erythritol, vanilla extract, and lime juice.
  3. Blend the ingredients at high speed until the mixture is completely smooth and creamy.
  4. Sample the mixture and add more erythritol if a sweeter taste is desired.
  5. Pour the blended mixture into popsicle molds, leaving a small gap at the top for expansion.
  6. Insert popsicle sticks into the molds and transfer them to the freezer.
  7. Freeze for a minimum of 4 to 6 hours or until fully solidified.
  8. To release the popsicles, gently run warm water over the outside of the molds for a few seconds.

Notes

  • For an even richer texture, substitute full-fat coconut cream for the coconut milk.
  • Toss in a handful of fresh spinach while blending to boost the nutrient profile without changing the flavor significantly.
