Ingredients

- 1 ½ cups diced ripe mango (fresh or frozen)
- 1 cup full-fat coconut milk
- 2 tablespoons matcha green tea powder
- 2 tablespoons erythritol or your favorite keto-friendly sweetener
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lime juice
Instructions
- Place the diced mango in your blender.
- Add the coconut milk, matcha powder, erythritol, vanilla extract, and lime juice.
- Blend the ingredients at high speed until the mixture is completely smooth and creamy.
- Sample the mixture and add more erythritol if a sweeter taste is desired.
- Pour the blended mixture into popsicle molds, leaving a small gap at the top for expansion.
- Insert popsicle sticks into the molds and transfer them to the freezer.
- Freeze for a minimum of 4 to 6 hours or until fully solidified.
- To release the popsicles, gently run warm water over the outside of the molds for a few seconds.
Notes
- For an even richer texture, substitute full-fat coconut cream for the coconut milk.
- Toss in a handful of fresh spinach while blending to boost the nutrient profile without changing the flavor significantly.
