Description

A delicious and healthy Keto Mee Goreng recipe using zucchini noodles and beef strips, perfect for a low-carb diet.


Ingredients

Scale
  • 1 pound beef sirloin, sliced into thin strips
  • 2 medium zucchinis, spiralized into noodles
  • 2 tablespoons coconut oil
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon chili paste (adjust to taste)
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Lime wedges for serving


Instructions

  1. Heat coconut oil in a large skillet or wok over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the onion, garlic, and red bell pepper. Stir-fry for about 2-3 minutes until the vegetables are tender.
  3. Add the spiralized zucchini noodles to the skillet and stir-fry for another 2-3 minutes until they begin to soften.
  4. Return the cooked beef to the skillet. Add soy sauce, chili paste, fish sauce, sesame oil, ground ginger, salt, and pepper. Toss everything together and cook for an additional 2-3 minutes until heated through.
  5. Remove from heat and stir in chopped green onions. Serve hot with lime wedges on the side.

Notes

  • For added crunch, toss in some chopped peanuts or sesame seeds before serving.
  • For a vegetarian version, substitute beef with tofu or tempeh and use vegetable broth instead of fish sauce.
