A delicious and healthy Keto Mee Goreng recipe using zucchini noodles and beef strips, perfect for a low-carb diet.

- 1 pound beef sirloin, sliced into thin strips
- 2 medium zucchinis, spiralized into noodles
- 2 tablespoons coconut oil
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 2 green onions, chopped
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon chili paste (adjust to taste)
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- Heat coconut oil in a large skillet or wok over medium-high heat. Add the sliced beef and cook until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the onion, garlic, and red bell pepper. Stir-fry for about 2-3 minutes until the vegetables are tender.
- Add the spiralized zucchini noodles to the skillet and stir-fry for another 2-3 minutes until they begin to soften.
- Return the cooked beef to the skillet. Add soy sauce, chili paste, fish sauce, sesame oil, ground ginger, salt, and pepper. Toss everything together and cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in chopped green onions. Serve hot with lime wedges on the side.
Notes
- For added crunch, toss in some chopped peanuts or sesame seeds before serving.
- For a vegetarian version, substitute beef with tofu or tempeh and use vegetable broth instead of fish sauce.
