  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon chili paste (adjust to taste)
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 cup bean sprouts
  • 2 green onions, chopped
  • 2 hard-boiled eggs, halved
  • Salt and pepper to taste
  • Lime wedges for serving


Instructions

  1. Start by preparing the shirataki noodles according to package instructions. Rinse them thoroughly and drain well to remove any odor. Set aside.
  2. In a large pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  4. Add the curry powder, soy sauce, and chili paste, stirring to combine and cook for another minute.
  5. Pour in the vegetable broth and coconut milk, bringing the mixture to a gentle simmer. Let it cook for about 5-7 minutes to allow the flavors to meld.
  6. Add the shirataki noodles and bean sprouts to the pot, stirring to combine. Cook for another 2-3 minutes until heated through.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions, halved hard-boiled eggs, and lime wedges on the side.
