Ingredients

  • ¼ cup granulated erythritol (or preferred keto sweetener)
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the oven to 325°F. Line a muffin tin with paper liners or grease with cooking spray.
  2. In a medium bowl, combine the almond flour, ¼ cup erythritol, and salt. Stir in the melted butter until the mixture resembles wet sand.
  3. Evenly distribute the almond mixture into the bottom of each muffin cup, pressing down firmly to form a crust. Bake for 10 minutes, then remove from the oven and let cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add ½ cup erythritol, mixing until well combined.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon juice until smooth.
  6. Pour the cream cheese mixture over the cooled almond crusts, filling each cup about ¾ full. Bake for an additional 20-25 minutes, or until the edges are set but the center is slightly jiggly.
  7. Turn off the oven and leave the cheesecakes inside for 1 hour to cool gradually.
  8. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours before serving.
