- 1 cup unsweetened shredded coconut
- 1/4 cup coconut oil
- 1/4 cup sugar-free sweetener
- 1/4 teaspoon vanilla extract
- 1 cup sugar-free dark chocolate chips
- 1 tablespoon coconut milk
Instructions
- In a mixing bowl, combine shredded coconut, coconut oil, sweetener, and vanilla extract.
- Stir until well combined, then shape into small bars and place them on a baking sheet.
- Freeze the bars for about 30 minutes until firm.
- While the bars are freezing, melt dark chocolate chips with coconut milk in a double boiler or microwave.
- Remove the bars from the freezer and dip each one in the melted chocolate, coating them thoroughly.
- Place the coated bars back on the baking sheet and refrigerate until the chocolate hardens.
Notes
- Store in an airtight container in the refrigerator.
- These bars can also be cut in half for smaller portions.
