Ingredients

  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup erythritol
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar-free chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix almond flour, cocoa powder, erythritol, baking soda, and salt.
  3. In another bowl, cream together the butter and eggs. Stir in peppermint extract.
  4. Combine the wet and dry ingredients and mix until combined.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet.
  7. Bake for 12-15 minutes or until set.
