Description

A delightful keto-friendly cake infused with the flavors of Moroccan oranges and almonds.


Ingredients

  • 2 medium oranges (approximately 12 ounces)
  • 1 cup almond flour
  • 1/2 cup granulated erythritol or your favorite keto-friendly sweetener
  • 4 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup sliced almonds (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
  2. In a saucepan, place the whole oranges and cover them with water. Bring to a boil, then lower the heat and simmer for about 30 minutes until tender. Drain and cool the oranges.
  3. Once cooled, slice the oranges in half, discard any seeds, and blend the entire fruit, including the peel, until smooth.
  4. In a large bowl, mix together the almond flour, erythritol, baking powder, salt, cinnamon, and nutmeg until well combined.
  5. In a separate bowl, whisk the eggs with the melted butter until frothy. Incorporate the orange puree into the egg mixture and stir until well blended.
  6. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  7. Transfer the batter into the prepared cake pan, smoothing the top with a spatula. Evenly distribute the sliced almonds on top.
  8. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
  10. For the best taste experience, serve the cake at room temperature, allowing it to chill in the refrigerator for at least an hour before enjoying.
