A delightful keto-friendly cake infused with the flavors of Moroccan oranges and almonds.
Ingredients

- 2 medium oranges (approximately 12 ounces)
- 1 cup almond flour
- 1/2 cup granulated erythritol or your favorite keto-friendly sweetener
- 4 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup sliced almonds (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.
- In a saucepan, place the whole oranges and cover them with water. Bring to a boil, then lower the heat and simmer for about 30 minutes until tender. Drain and cool the oranges.
- Once cooled, slice the oranges in half, discard any seeds, and blend the entire fruit, including the peel, until smooth.
- In a large bowl, mix together the almond flour, erythritol, baking powder, salt, cinnamon, and nutmeg until well combined.
- In a separate bowl, whisk the eggs with the melted butter until frothy. Incorporate the orange puree into the egg mixture and stir until well blended.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
- Transfer the batter into the prepared cake pan, smoothing the top with a spatula. Evenly distribute the sliced almonds on top.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
- For the best taste experience, serve the cake at room temperature, allowing it to chill in the refrigerator for at least an hour before enjoying.
