A delicious Keto Moussaka featuring layers of eggplant, beef, and creamy cheese, perfect for a low-carb Mediterranean meal.

- 2 medium eggplants, cut into 1/4-inch thick slices
- 1 teaspoon sea salt
- 1 pound ground lamb or beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) crushed tomatoes, drained
- 1 teaspoon dried thyme
- 1 teaspoon ground nutmeg
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups cottage cheese
- 1 large egg
- 1 cup grated cheddar cheese
- 1/2 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
Instructions
- Preheat your oven to 375°F.
- Sprinkle the eggplant slices with sea salt and let them rest for 30 minutes to extract excess moisture. Rinse and pat dry.
- In a large skillet, warm the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until translucent, about 3-4 minutes.
- Add the ground lamb or beef, browning it until fully cooked. Mix in the crushed tomatoes, thyme, nutmeg, black pepper, and red pepper flakes. Let simmer for about 10 minutes, then remove from heat.
- In a separate bowl, blend the cottage cheese, egg, and half of the grated cheddar cheese until smooth and creamy.
- In a greased 9×13-inch baking dish, arrange half of the eggplant slices in a single layer. Spread half of the meat mixture over the eggplant, followed by half of the cheese mixture. Repeat these layers, finishing with the remaining eggplant on top.
- Top with the rest of the cheddar and crumbled feta cheese.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for another 15-20 minutes, or until the cheese is melted and golden brown.
- Allow to cool for about 10 minutes before slicing and serving.
Notes
- Serves 6.
- For a spicier dish, add more red pepper flakes.
- Letting the eggplant rest with salt helps to reduce bitterness and moisture.
