- 1/4 cup erythritol
- 3 eggs
- 1/2 cup unsweetened almond milk
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a round cake pan.
- In a bowl, mix the almond flour, cocoa powder, and erythritol.
- Add the eggs and almond milk, stirring until smooth.
- Pour the mixture into the pan and bake for 25 minutes.
- Allow the cake to cool completely before adding the mousse topping.
- Whip the cream until soft peaks form and fold in the vanilla extract and melted chocolate chips.
- Spread the mousse evenly over the cooled cake.
