Ingredients

- 2 cups almond flour
- 1/4 cup granulated erythritol
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1/2 cup unsweetened almond milk
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a mixing bowl, combine almond flour, erythritol, cocoa powder, baking powder, and salt.
- In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool before removing from the pan.
- For a cinnamon sugar coating, combine erythritol and cinnamon in a bowl and sprinkle on cooled muffins.
Notes
- Store muffins in an airtight container for up to 5 days.
- For extra flavor, add a pinch of nutmeg to the batter.
- These muffins can be frozen for up to 3 months.
