Description

Delicious keto muffins that taste like cinnamon sugar donuts. Perfect for a low-carb diet!


Ingredients

Scale
  • 2 cups almond flour
  • 1/4 cup granulated erythritol
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine almond flour, erythritol, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together eggs, almond milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool before removing from the pan.
  8. For a cinnamon sugar coating, combine erythritol and cinnamon in a bowl and sprinkle on cooled muffins.

Notes

  • Store muffins in an airtight container for up to 5 days.
  • For extra flavor, add a pinch of nutmeg to the batter.
  • These muffins can be frozen for up to 3 months.
