Ingredients

  • 1 can (5 oz) tuna, drained
  • 1 large egg
  • 1/4 cup almond flour
  • 1/4 cup green onions, finely chopped
  • 1 tablespoon mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon soy sauce (or coconut aminos for a soy-free option)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 sheets of nori (seaweed)
  • 1 tablespoon sesame oil (for frying)


Instructions

  1. In a mixing bowl, combine the drained tuna, egg, almond flour, green onions, mayonnaise, garlic powder, soy sauce, salt, and black pepper. Mix until well combined.
  2. Divide the mixture into four equal portions and shape each portion into a patty.
  3. Lay a sheet of nori on a clean surface. Place one tuna patty in the center of the nori and fold the edges over to wrap it securely. Repeat with the remaining patties and nori sheets.
  4. Heat sesame oil in a non-stick skillet over medium heat. Once hot, add the nori-wrapped tuna cakes to the skillet.
  5. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and let cool for a minute before serving.

Notes

  • For added flavor, mix in a teaspoon of sriracha or hot sauce into the tuna mixture before forming the patties.
